It is so easy to find something for the sweet tooth in Asia. And most of the dessert can also be easily cooked at home. During our time in Laos we really enjoyed their creamy and tasty sweet sticky rice with mango and coconut milk (Khao Niow Mak Muang). If we could, we would order it in every Asian restaurant. But now that we have the recipe we can eat it whenever we want. It is quite easy to prepare and (by the way) it happens to be vegan and gluten-free too.
Recipe for 4 Portions
cooked sticky rice
Need some sticky rice and never cooked it? No problem. We will tell you how to do it! We found a quite easy way…
Mix 2 cups of cooked STICKY RICE with 2 cups of COCONUT MILK and 1 pinch of SALT in a bowl. Make sure the whole rice is coated with coconut milk. Put it aside and leave it for a while.
Put a wok on your stove and add 3 tbsp of BROWN SUGAR. You could also use sugar cane instead. Cook and stir it on high heat until it becomes dark chocolate brown. Make sure to not completely burn it.
Add the STICKY RICE and gradually add the COCONUT MILK too. Also add 1 tsp of VANILLA SUGAR. Stir well and cook on medium heat for about 5-10 minutes until all the coconut milk is absorbed. Feel free to add some more coconut milk if needed until you get the desired creamy texture.
Cut the MANGO in slices or small cubes.
Whip the rest of the COCONUT MILK until it is fluffy. Serve the sweet coconut sticky rice with some whipped coconut milk, delicious mango and white sesame on top. Feel free to also add some mint. You can of course also use any other fruits or some delicious ice cream.
