Let’s start with the obvious. When you’re having a few days off and you’re able to escape the summer heat without having to work or cook, there’s nothing better than a bowl of warm, sweet ice cream. And the Mayo Clinic is telling you that it could cause a “serious rise in blood sugar level.” That’s right, when you eat ice cream for just 30 minutes, your blood sugar level might shoot up 100mg per serving. It’s been known to rise up to 200mg in some cases.
