I have a really hard time deciding between salmon steak and fillet. The fish I have is not the same as the fish I have in the grocery store, so for me it’s the meat that counts. But that’s kind of irrelevant to me because it’s the consistency of the meat that matters, and the consistency of the meat is what I gravitate towards.
On a side note, I don’t like the term “fillet.” I think the word fillet has its own connotations, and there’s a lot of confusion about what the meat should be cooked like. I personally think it should be cooked like fillet steak, but I’m not sure if everyone agrees. I’m a fan of a little salt, to me the most important cooking ingredient is salt. But I’m not a fan of the fillet steak.
