The Massaman Curry – Flo’s favorite – is a very popular recipe from the southern thai cuisine. King Phra Phutthaloetla was so impressed by the taste that he composed a poem about the cook. The dish and its history also inspired Flo. This is why he counts this curry to one of his most favorites. And he also added his own personal touch to the original recipe.
Recipe for 4 Portions
1/4 pcs (100g)
1,5 cups (350 ml)
yellow curry paste
5 cm peace

Sear CHICKEN separated and spice up with salt and pepper.
Heat up OIL in a Wok and add GARLIC, SHALOTTES, CHILI, THAI BASIL, LEMONGRAS and GALANGAL. Bring to boil over low heat.
Add YELLOW CURRY PASTE, 150 ml COCONUT MILK, POTATOES, SWEET POTATO, CINNAMON and boil for 10 minutes.
Add CHICKEN, CORIANDER and the rest of the COCONUT MILK and boil all together until potatoes are nearly tender (around 5-8 minutes).
Add TOMATOES and TAMARIND JUICE. Ready to serve after 2 more minutes.
Serve the curry with some fresh coriander. As side dish serve rice or naan (indian flatbread).
