Seafood is quite popular in most Southeast Asian regions. Even during our time in Laos, where people do not have access to the sea at all, we were treated to a lot of delicious fish dishes. All the cities we visited in Laos were located next to a river as the fishing industry is a major source of sustenance and food security for the Laotian people. One of our favorites was the ginger fish (pa pad king). This one is perfect for those who love the flavor and spiciness of ginger combined with fresh coriander and fruity lime juice. The ginger fish is not only quick and easy, but also healthy, filling and delicious. Be sure to cut and prepare all of the ingredients prior to starting to cook – this way your meal will be ready in about 10 minutes!

Recipe for 4 Portions

  • fish filet

    300 g

  • ginger

    60 g

  • onion

    1 pc

  • shallot

    1 pc

  • garlic

    2 cloves

  • sunflower oil

    3 tbsp

  • sugar

    2 tbsp

  • oyster sauce

    3 tbsp

  • soy sauce

    3 tbsp

  • lime juice

    3 tbsp

  • fish sauce

    1 tbsp

  • coriander

    1 bunch

  • spring onion

    1 stalk

  • bamboo shoots

    150 g

  • white pepper

A proper Asian meal consists of several dishes – ready to be shared across the table. Go ahead and combine this one with some rice and lemongrass chicken!

Start cooking!
  • 1. Step

    Slice the GARLIC and SHALLOT. Cut the ONION in chunks or slices and thinly slice the GINGER. Cut the FISH FILET in chunks (we recommend to use codfish or any other firm type of fish – it should not fall apart during the cooking process). Wash the CORIANDER and leave it to rinse. Chop the SPRING ONION. In case you bought BAMBOO SHOOTS in a jar or can, drain them and put them aside for later. Note: Instead of fish you can also use chicken or tofu.

  • 2. Step

    Heat the SUNFLOWER OIL in a wok or big pan. You could also use some yellow bean oil instead. Add the SUGAR and stir until the mixture becomes nice dark chocolate brown. Make sure to not burn it though.

  • 3. Step

    Add GARLIC, SHALLOT, ONION and GINGER. Then toss, lower the heat and fry all the ingredients. Add some water if necessary.

  • 4. Step

    Add the FISH and stir gently. Also add OYSTER SAUCE, FISH SAUCE, SOY SAUCE and a bit of water. Taste the mixture before adding all the sauces. If you like the taste already you can also use a little less or more. Also add the BAMBOO SHOOTS. Stir, cover and cook on medium heat for 3 minutes.

  • 5. Step

    Taste and uncover. Cook for another 2 minutes on high heat. Turn down the heat and add LIME JUICE and some WHITE PEPPER.

  • Final Step

    Time to serve the ginger fish! It goes very well with some rice. Top the dish with some fresh CORIANDER and chopped SPRING ONION right before serving.
