We cooked and ate the fried tomato tofu together with our cooking companion Hoa from Hanoi, Vietnam. This tasty vegetarian dish can be prepared very quick and easy. You can either have it as a side dish for a big Asian meal where you share lots of different dishes. But you can also combine it with some rice and have it as a main dish. Both options will make you just as happy as we were when Hoa shared this recipe with us!
Recipe for 4 Portions
tofu
600 g
spring onion
1 bunch
tomato
2 pc
sunflower oil
sugar
1 tsp

We asked our cooking companion Hoa some questions so you can meet this lovely girl from Vietnam as well!
1. Step
Cut the TOFU in cubes. Fill a pan with a lot of SUNFLOWER OIL. Make sure the whole pan is covered with oil so the tofu will not start to burn. Fry the tofu and turn it regularly so it will get nice golden brown from all sides. If needed add some salt and pepper.
2. Step
Cut the TOMATOES in small pieces and add everything in a second pan. Stir the tomato and add 1 tsp SUGAR to reduce the sourness. You can also use some honey instead.
3. Step
Cut the SPRING ONIONS into small pieces.
4. Step
Add the fried TOFU to the TOMATOES. Pour 1/2 cup of WATER in the pan and boil. Then add the cut SPRING ONIONS and keep boiling until all the water is gone.
Final Step
Put the fried tomato tofu on a plate and serve it. We recommend to have it with some rice and a nice fresh salad.
