One of the culinary icons of Lombok, Indonesia for sure is the famous Chicken Taliwang: A super spicy dish of grilled or fried chicken. It is just the right dish for all the people who like their food hot and spicy. We came across a lot of spicy food during our stay in Indonesia, but this one topped them all. Just in case you are not a big fan of spicy food, do not worry, just take less chili or use sweet chili instead. And if you are crazy about spicy food – go for more if you dare!

We received this recipe during our stay on Gili Air, Lombok – make sure to visit this wonderful island paradise once in your life!
Peel the GALANGAL and cut into pieces. Remove the stem of all fresh and dried RED CHILIS. Put the GALANGAL, dried and fresh RED CHILIS, SHALLOTS, PALM SUGAR, MACADAMIA NUT and GARLIC in a blender. Add some WATER until it covers all the ingredients. You can also add 1-2 pinches of SALT. Blend everything for about 1 minute on the highest level. This is the taliwang paste. Put it aside for a moment.
Cut the CHICKEN BREAST into big slices. You can also use a chicken leg instead. Heat some SUNFLOWER OIL in a pan. Once it is hot enough add the CHICKEN and fry it until it starts turning white. Now add the TALIWANG PASTE. Let it cook for a few minutes.
Next you add the COCONUT MILK to the pan. Mix everything well. And turn down the heat. Let the everything cook for about 10 minutes or until the taliwang paste starts to dry/disappear.
Once the taliwang paste is gone, take out the chicken and serve it on a plate. Add some rice as side dish and enjoy the spicy chicken taliwang.
