This is another recipe we cooked together with Kathrin from einMAHLeins. This Blackberry Pie is made with blackberries out of her own garden. With a big scoop of vanilla ice cream and some icing sugar it tastes like heaven. We think it is an absolute must to share this tasty dish with you. Another big thank you to Kathrin from Switzerland.
Recipe for 4 Portions
Meet Kathrin from einMAHLeins and get to know our cooking companion from Biel in Switzerland.
Seperate the egg yolk and the white of all 3 EGGS.
Cream the EGG YOLK with 4 tbsp HONEY and add MILLED ALMONDS, MILLED COCONUT and VANILLA POWDER.
Beat the EGG WHITE with a pinch of SALT until stiff. After this fold it in the EGG YOLK MIXTURE.
Next carefully add the BLACKBERRIES to the mixture and fold them in. Fill the completed mixture in a greased casserole.
Bake for 30-40 min at 180°C. The blackberry pie tastes best with some icing sugar on top and a scoop of vanilla ice cream.
