Afruity and spicy salsa, with its great combination of sweet, sour and spicy flavors, is the perfect companion for a summer bbq or snack. It also makes a refreshing and healthy ‘sauce’ or dip for some fresh cooked (or grilled) meat or fish. We love this recipe for cooked salmon with a fruity pineapple and papaya salsa because of all the amazing flavors. It also reminds us of our time in beautiful Hawaii, where pineapples were extra sweet and delicious. And it is so quick and easy to prepare.

Out of the many Hawaiian islands we only got to visit two, but we could still realize what the spirit of ‘Aloha’ is about, especially in Maui – an island you definitely should not miss!
Prepare the PINEAPPLE PAPAYA SALSA: Dice the PINEAPPLE, PAPAYA, GREEN BELL PEPPER, ONION and TOMATO. Finely chop the PARSLEY. Squeeze the LEMON and save the juice.
Gently toss all the fruit and vegetable together in a mixing bowl. Season with 2 tbsp LEMON JUICE, 1/2 tsp SALT and 1/8 tsp BLACK PEPPER. Also add 1 tsp of chopped PARSLEY. Mix, cover and refrigerate until chilled to allow all the flavors to blend.
Preheat a good pan and add some cooking oil. Place the SALMON in the pan and gently cook from both sides until the fish starts to firm and is no longer translucent. Add some SALT and PEPPER to season.
Note: You can also cook the fish in an oven or steam it. However you prefer to cook it.
Place the cooked SALMON on a plate and add some of the PINEAPPLE PAPAYA SALSA. We like to eat this dish with some rice, but in general you can add any side you like. It also tastes great with some fresh baguette, a crispy green salad or cooked potato.
